Life Got In The Way

So this summer it feels like I lost it and went into survival mode for a couple of months. I lost a good bit of frugalness and by just surviving we saved a good deal less than we could have. I didn't cook nearly as much as I should have, we skated by not going grocery shopping more weeks than I can count, we ordered pizza or went out to eat more than normal. Honestly I don't feel too bad about it, we were busy enjoying life and having so much fun we didn't have time for the normal stuff. Now that the summer is over and things are slowing down and the house is getting back in order I feel like I can tackle this and get back on track with our savings and also prepare more healthy meals for me and the hubs.
This past week we did eat healthy meals that I prepared myself and I'm going shopping today to make sure that we do the same next week. I'm keeping a tighter reign on us as far as spending goes and making sure we're not going too crazy. Any ideas for quick, easy, healthy meals for this week? I love a challenge so leave me a recipe :)

btw as far as weight loss goes I lost another 2 lbs this past week! Yeah!!

Cooking spray
2/3 cup instant oats
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon mustard powder
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 (4-ounce) boneless skinless chicken breast halves
2 tablespoons Dijon mustard
2 cups frozen green peas, steamed or microwaved until hot

Preheat oven to 400 degrees F.
Coat a large baking sheet with cooking spray.

In a resealable plastic bag or shallow dish, combine oats, garlic powder, onion powder, mustard powder, paprika, oregano, thyme, salt, and pepper. Mix well and set aside.
Brush each chicken breast with Dijon mustard. Add chicken to oat mixture with tongs and turn to coat both sides. Transfer chicken to prepared baking sheet and spray with cooking spray.

Bake 30 minutes, until golden brown and cooked through. Serve with peas.

Balsamic and Rosemary Grilled Salmon

INGREDIENTS (Nutrition)
4 (4 ounce) salmon fillets
sea salt to taste
1 tablespoon balsamic vinegar
3 tablespoons olive oil
1/4 cup lemon juice
1 clove garlic, minced
1 sprig fresh rosemary, minced
Add to Recipe Box

DIRECTIONS
Season salmon fillets to taste with sea salt, and place into a shallow, glass dish. Whisk together vinegar, olive oil, lemon juice, garlic, and rosemary; pour over salmon fillets. Cover, and refrigerate at least 30 minutes.
Preheat an outdoor grill for medium-high heat, and lightly oil grate.
Remove salmon from marinade, and shake off excess. Discard remaining marinade. Cook on preheated grill until fish is opaque in the center and flakes easily with a fork, about 4 minutes per side.

Crockpot Whole Chicke with rosemary

--one thawed and skinned whole chicken. It wasn't as gross for me this time! yay! But I'm not pregnant, so if you are and are prone to pukeage, be forewarned...
--head of garlic
--2 lemons (yeah, those are lemons. I tried to find yellow ones, and even went outside at 3:30am (I had insomnia) with a flashlight to find riper ones, and nearly scared the neighbors cat bald, but could only find green guys. They still tasted okay.)
--salt and pepper
--a bunch of fresh rosemary (this is from my mom's garden. hi, mom! thanks for the rosemary!)

After you skin the chicken and keep from puking, rub it inside and out with a bunch of salt and pepper.

Plop it into the crockpot.

Peel your garlic and shove a bunch of the whole cloves into the bird cavity and throw some more on top and around the chicken.

Slice the lemon and put slices on top, around, and inside the bird

Wash the rosemary and do the same. If you are using dried rosemary, use a good amount---probably 2-3T of dried herbs.

Do not add water.
cook on low for 8-10 hours. I put this on at 4am, and had it for lunch at noon. Then I took a 2hr nap!

This is a moist, delicious chicken that is company-worthy. It will fall apart when you take it out of the crock if you cook it as long as I did. If you would like a fancier presentation, keep an eye on it and check the doneness after 6 or 7 hours, then carefully remove with large tongs.

Keep the garlic to serve alongside with some rice or potatoes and some fresh vegetables.

Mediterrean Salmon

INGREDIENTS:

1/2 cup olive oil
1/4 cup balsamic vinegar
4 cloves garlic, pressed
4 (3 ounce) fillets salmon
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh basil
1 1/2 teaspoons garlic salt

DIRECTIONS:

Mix together the olive oil and balsamic vinegar in a small bowl. Arrange the salmon fillets in a shallow baking dish. Rub garlic onto the fillets, then pour the vinegar and oil over them, turning once to coat. Season with cilantro, basil, and garlic salt. Set aside to marinate for 10 minutes.

Preheat your oven's broiler.

Place the salmon about 6 inches from the heat source, and broil for 15 minutes, turning once, or until browned on both sides and easily flaked with a fork. Brush occasionally with the sauce from the pan.

Lemon thyme tilapia packets

2 tilapia filets
Salt and pepper
A touch of olive oil
1 organic lemon
2 large handfuls of spinach leaves, washed
A few sprigs of fresh thyme

Preheat oven to 425. Lightly spray 2 large sheets of foil or parchment paper with cooking spray. Slice lemon into 8 slices and discard the 2 end pieces. Place 3 slices of lemon horizontally in the center of the foil. Place handful of spinach on top of lemon. Place seasoned tilapia filets on top of spinach, drizzle with a little olive oil, and place thyme sprigs on top of fish. Fold up packets and place in preheated oven on baking sheet. Bake for 20 minutes and remove from oven. Allow to rest for a few minutes before opening packet. Discard lemon slices and thyme sprigs, serve, and enjoy!

Congratulations on the weight loss -- wow!

I've posted a few healthy recipes but my favorite will always be the grilled chicken and mushroom salad (on my site). It's delicious!
